food of the movie under the tuscan sun?
does anyone know any of the recipes from under the tuscan sun, i especially like the pasta meal that was shown when diane lane made the meal. or does anyone know any simple italian pasta meals?
Tons of pasts recipes out there. My favorite is baked rigatoni with Italian sausage and mozzarella cheese. Precook the pasta, drain and pour in a greased casserole and mix in sliced sausage and jarred pasta sauce. Cook until hot and bubbly, then top with cheese for the last few minutes.
Another I like is spinach stuffed shells. Steam chopped spinach with diced onions and a small amt. of garlic and oregano to taste. At the same time cook large pasta shells just until firm, not soggy, then drain.
Mix the spinach with a carton of cottage cheese and some grated mozzarella, and one to two eggs. Stuff each shell and place in a greased casserole. Top each with a spoon of jarred sauce and bake until bubbly, add cheese on top during the last few minutes.
