Recipes Italian Sausage Dishes

Does anyone know of a good italian sausage recipe?
I wonder if anyone can tell me recipes, non tradional uses for mild italian sausage other than pasta type dishes. I want to make something totally different using this wonderful italian sausage. Thanks for any suggestions.
MY BURRITO:
1 1/2 lbs. Italian sausage, cooked
1 onion, chopped, cooked
1 small can chopped green chilies (optional)
1 package frozen create-a-meal vegetable mix (broccoli, snap peas, water chestnuts, red pepper strips)
1 package chili seasoning mix
3/4 cup water
1 (8 oz.) package shredded cheese (Mexican)
8-10 large flour tortillas
sour cream
In large skillet, cook sausage and onion thoroughly; drain off grease. Set aside in bowl.
In same skilled saute chilies and frozen vegetables until tender; re-add sausage mixture, chili seasoning and water. Mix until blended and heat until bubbly. Place a small amount of cheese on the lower center portion of the tortilla (see directions on package how to wrap) followed by 1/2 cup sausage mixture. Fold bottom up, side inwards, rolling up to top. Place the seam downwards on cookie sheet. Same procedure with remaining tortillas. Bake at 350 degrees for 30 minutes. Serve with sour cream.
