having lamb tonight, got some baby courgettes & I’m stuck for something to do with them, any recipe ideas?
I’m thinking Italian, olive oil, garlic etc. something simple please
If they’re real baby then slice them lengthwise, otherwise slice them thinly across. Pan fry in a big frying pan with a glug of olive oil and whole peeled cloves of garlic. Season well with salt and pepper – takes approx 1/2 hour to get them good and soft – and watch they don’t catxch and burn.
Heat is best hot at first and then turned low.
