What is a great Italian entree recipe?

I need something that can feed about 4 people. Not something too complicated please!

Chicken Parmesan! So easy!

Boneless, Skinless Chicken Breasts
Italian Bread Crumbs
Sliced Mozzarella or Provolone
Egg

Pound chicken breasts to flatten and tenderize. Dip in beaten egg. Dredge in bread crumbs. Pan fry in a little veggie oil (olive oil doesn’t get hot enough). Put sliced cheese on top and cover until melted.

Serve over angel hair or spaghetti with a good jarred sauce (I like Classico) and sprinkle with fresh grated Parmesan.

Originally published in 1898, this is an early instruction in French cuisine for the English market, and still contains much information of practical use today. Many of the earliest books, particularly those dating back to the 1900s and before, are now extremely scarce and increasingly expensive.
