How do I make these Italian cookies?

I googled Italian butter cookies and I found these but there was no recipe, and they’re made a little differently…Is that chocolate inside? They sort of look like Milano’s to me…Does anyone have a recipe for them?

I love these cookies! I don’t know an official recipe, but based on my experience, this is what I would try:

For the cookie, a pretty standard butter cookie recipe, with a chocolate glaze and sprinkles:

3/4 cup unsalted butter
3/4 cup confectioner’s sugar
1 1/2 cup all-purpose flour
1 tsp vanilla
1/2 tsp. salt
1 large egg

4 oz. semi-sweet or bittersweet baking chocolate (or chocolate chips)
sprinkles

In a standing mixer, or using an electric hand mixer, cream the butter and sugar, until they are uniform and fluffy (this should take several minutes). The butter should be slightly below room temperature, just soft enough to mix with the sugar. If at any point in the process it becomes too warm, just put the mixing bowl in the fridge for a couple minutes.

Whisk the egg, then combine with the vanilla to the butter mixture. In a separate bowl combine the flour and salt, then slowly mix the flour/salt mixture into the wet ingredients. These should form a uniform dough. Shape into a ball and chill.

Preheat the oven to 350. Take out the chilled dough and break off pieces, and roll out into ovals. Place on a parchment paper lined baking sheet, and bake for approximately 10-12 minutes, until just beginning to brown. Take out and let cool.

- Note: to get the nice ridges from the picture you will need a pastry bag. These directions are for smooth sandwich cookies, which is the closest you can get in most kitchens.

While the cookies are baking, melt chocolate in a double boiler (or a saucepan placed inside a larger saucepan with boiling water). Once the cookies are cool, add melted chocolate between each pair. Dip each of these sandwiches into melted chocolate, then into sprinkles. Once the chocolate has cooled and hardened, they are ready to eat!
