Hi !

One can make so many things from leafy vegetables ; either as a part of the meal ,or even snacks ,as per your choice.
But remember one thing, if you wish to retain the nutrient value, then cook these just enough , and not with too much masala , but just some green chillies,onions , and garlic , cumin seeds and turmeric powder for flavour.
However,if you want to use them to enhance the taste of the meal , you can combine them with potatoes, green peas , fresh cream ,paneer ,gram flour,etc.
Since you are asking for a veg,recipe ,i will give you the idea of methi pakodas.
clean methi leaves , but do not cut them fine , just crush them to mix with a batter of gram flour of semi-liqiud consistency, and add red chilli powder, salt and jeera powder , a pinch of hing , and some dry roasted ajwain crushed and deep-fry methi pakodas , by making small balls .
Serve hot with green chutney ,made with coriander leaves and green chillies , some sauce if you like.
You can also mix palak ,methi in whole wheat flour, knead it into a dough , and make tasty parathas. Serve with curds or yogurt ,pickles etc.

Indian pickles consist of a large variety of pickled fruits and vegetables which are marinated in oil or lemon juice and different Indian spices and salt. Some regions also specialize in pickling meats and fish. Homemade pickles are prepared in the summer and kept in the sun during daytime for at least three weeks before use. They are stored in porcelain or glass jars with airtight lids. The acidic nature of the marinade retards bacterial growth, and oil acts as a preservative. Pickles retain their freshness and flavor so long as they do not come into contact with moisture. Commercially produced pickles use preservatives like citric acid and sodium benzoate.
