Recipes French Pastries

if you know what “dacquoise,” “joconde,” and “macaron” means….?
hey, im a bit of a french pastry fanatic…not that ive ever eaten any or made any….lol…im just “creative” and think up random ideas for baking and then look up my ideas….of course many of my ideas already have been made and have fancy french names associated with them
anyway, if you have any experience, what would you suggest i actually try to make 1st? the dacquoise? joconde? or macaron shells? im already good with making fillings (ganaches, buttercreams, etc)…also, any tips for me?
btw PLEASE NO RECIPES! just tips… thanks!
A dacquoise is a dessert cake made with layers of almond and hazelnut meringue and whipped cream or buttercream. Not the easiest thing to master, but it would give you some much lauded skills … once you master them
Joconde is an almond sponge cake which I think would be the easiest thing to start with
Macarons are insanely complicated meringue-based confectionary that consists of two outter cookies with an equally complicated filling.
