What is the best method for cooking Chinese BBQ pork?
i have read various recipes and methods, some say to fry the meat some say to cook in the oven. which is best? also what cut of meat is traditonaly used? most of the recipes i have read say to use lean meat, but i would prefer to use something a little more fatty.
Pork Tenderloin in the oven using the broiler.
Use a Char Sui recipe.

You could use boneless country style pork ribs, but plan on par boiling them a bit first as they are a bit tougher than tenderloins though more fatty.
